Job summary
Ciao Melbourne!DOC Group is seeking a new head chef to lead our Lygon Street restaurant and cafe. We're looking for a creative, passionate leader with a deep understanding of Italian food and culture, to take over daily operations and continue our showcase of fresh, authentic Italian food and service.
About us:
D.O.C Group is, and has been a Lygon street institution since 1997. We have since grown to a 7 Venue company across Carlton, Southbank and Mornington in Victoria and Surry Hills in Sydney. Were expanding our group and were looking for great new additions to our team to continue our growth.
About the role:
day to day operations will include:Maintaining overall responsibility for the kitchen team and dish offerings. Menu creation including seasonal breakfast menus, dinner menus and daily specials with creative freedom and flexibility. Contributing to kitchen preparation and service during peak periods. sourcing and procurement of suppliers and ingredients. Working alongside management and directorship to maintain cost of goods. Regular stocktaking and standardising protocols. Maintaining a clean and hygienic work environment, enforcing hygiene standards in the workplace. Building an enthusiastic team and workplace morale. rostering in accordance with availability and skill set diversity. Overseeing training of junior cooks and the continued development of senior chefs.
About you:
Were looking for a team member who is looking to grow as an individual within the company, key attributes we are looking for include:An autonomous leader, with great communication skills and clear vision. Holds relevant qualifications and can display clear industry education. Has a deep passion for Italian culture, experience living abroad or immigrating from Italy is beneficial. An understanding of Italian tradition, cuisine and provenance of food and wine, experience with fresh pasta and sauce is required. Experience leading a team during peak service. Has an understanding of safe and hygienic kitchen practices. Makes a strong individual contribution to their team. Shares our passion for authentic, quality produce and service.
