Randstad have permanent opportunities available for an experienced Chef to support one of our defence client sites in remote locations such as Alice Springs. This is a rostered position 15 days on 13 days off with all flights and accommodation provided. You will be providing services to on site services teams organising and providing meals to on-site teams. The Chef is primarily responsible for preparing, cooking and serving nourishing and attractive in-house meals for staff within the facilities and maintenance contract. The Chef is also responsible for ensuring that the safety and hygiene of kitchen equipment is maintained and adhered to within legislative and Workplace Health & Safety requirements.

This is a permanent, salaried position available to start asap. FIFO from Adelaide or Darwin.

Key responsibilities will include:

- Ensure all food is prepared as per food preparation requirements
- Ensure meals are produced on time, and sufficient quantities are available for the various areas
- Delegate duties to General Hands as required
- Ensure wastage is minimised by careful management of menus and food preparation practices
- Ensure proper hygienic storage methods are utilised to prevent food loss
- Ensure the security of all alcoholic and non-alcoholic drink stocks
- Undertake ordering and control of all kitchen related stock levels
- To interact and discuss any special dietary requirements with site based staff
- Take responsibility for meticulous personal hygiene
- Comply with Infection Control guidelines
- Plan menu offerings in order to ensure variety and quality
- Respond positively to special occasion requests e.g. birthday cakes
- Ensure all aspects of the kitchen are thoroughly cleaned before and after food preparation
- Cold chain food supply

- Verify that all produce has been stored and transported correctly
- Perform checks of produce as it is unloaded to confirm correct temperature
- Ensure all produce is unloaded and stored in the freezers or fridges in a determined timeframe to ensure temperature control is maintained
- Core temperature checks of frozen and fresh items are performed throughout the day as part of policy and procedure.

- Foster and maintain positive working relationships with clients, client sub-contractors, suppliers and consultants.
- Regularly evaluate objectives and plans to ensure continual improvement, and alignment with

changing project and client priorities.

Key Requirements:

- Certificate IV in Hospitality (Commercial Cookery) including Food Safe qualifications for the relevant State or Territory
- Responsible Service of Alcohol (RSA) Certificate
- Demonstrated ability to maintain a high standard in preparation, ordering, storage and food handling.
- Demonstrated ability to organise and work within a kitchen team
- Demonstrated ability to plan and manage food service budget
- Knowledge and experience in menu planning for dietary and nutritional requirements
- Experience working in similar environments or similar organisations
- Working knowledge of legislative requirements including Workplace Health & Safety and Food Safety Standards.
- Previous / recent experience in cooking at site facilities and within commercial kitchens
- Current National Police Check or willingness to undertake
